ETA: My chili powder is homemade and salt-free. (I'll post the recipe if anyone wants it.)
Not as fancy as edemynag's gourmet picnic, but for dinner tonight we had Sloppy Joes and Sweet Potato Fries.
Sloppy Joes from The America's Test Kitchen Family Cookbook
1 tablespoon olive oil
1 medium onion, minced
1/2 green bell pepper, diced, optional
1 garlic clove, minced
1/2 teaspoon chili powder
1 pound 85-90% lean ground beef
1 teaspoon brown sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1 cup tomato puree (we like Parmalat brand strained tomatoes)
1/2 cup ketchup
1/4 cup water
4 hamburger buns
1. Heat the oil in a 12-inch skillet over medium-high heat until shimmering. Add the onion (and green pepper, if using) and cook until softened and lightly browned, about 5 minutes. Add the garlic and chili powder and cook for 1 minute. Add the beef, brown sugar, salt, and black pepper. Reduce the heat to medium and cook, breaking the meat into small pieces, until the meat is no longer pink, about 4 minutes.
2. Stir in the tomato puree, ketchup, and water. Cook until the mixture is slightly thickened, about 5 minutes. Season with salt and black pepper to taste. Spoon 1/2 cup of the meat mixture into each hamburger bun. Serves 4.
